Potatoes. Potatoes. Potatoes. I’ll have them anyway I can get them. Yes! I love them just that much. Only problem is they love me just that much too. A straight  killer to the hips and thighs. But what can I say, “Country Cookin’ Makes Ya Good Lookin'”. Yes Ma’am! So my question to you is: Are you looking for something downright sinful? Something comforting?  Something that make you close your eyes and picture home? Well look no further cause this is it. Perfect for any breakfast, brunch, lunch or dinner table.

Psssst, Did I mention that it rivals the well known version @ Cracker Barrel. Well that’s what I heard but hey you haven’t heard that from me. LOL 🙂

Ingredients

  • 1 bag (2 pounds) frozen hash browns, thawed
  • 1 can cream of chicken & mushroom soup
  • 1/4 cup finely chopped onion
  • 1/4 cup butter, melted
  • 1/2 cup of sour cream
  • 1/2 cup of milk
  • 1 teaspoon salt
  • 1/2 teaspoon garlic powder and onion powder
  • 1/4 teaspoon pepper
  • 3 cups of shredded Colby Jack Cheese

Instructions

  1. Preheat oven to 350 degrees F
  2. In a large bowl, combine the cream of chicken & mushroom soup, diced onions, melted butter, sour cream, milk, salt, pepper, onion powder, garlic powder and 2 cups of the shredded cheese. Mix well.
  3. Add the shredded cheese to the mixture. Mix well.
  4. Add the thawed hash browns to the mixture. Mix well.
  5. Pour into the prepared 9 x 13 inch baking dish.
  6. Sprinkle with the remaining 1 cup of shredded cheese.
  7. Bake uncovered for an 1 hour or until hot and bubbly and it begins to brown on top.
  8. Allow to sit for about 10 minutes before serving & Enjoy!

CHEF’S TIP:  This cheesy hash brown casserole is a great recipe for you to BYOC (Be Your Own Chef). You can add bacon, ham or even hot dogs. Use different types of cheeses or even add some vegetables. Be creative and have fun with it!

Ingredients

  • 1 package (8 ounces) Philadelphia® Cream Cheese, softened
  • 1 can (14 ounces) sweetened condensed milk
  • 3/4 cup thawed lemonade concentrate
  • 1 carton (8 ounces) frozen whipped topping, thawed
  • Yellow food coloring, optional
  • 1 graham cracker crust (9 inches)
  • lemon slices, for garnish

Instructions

  1. In a large bowl, beat cream cheese and milk until smooth. Beat in lemonade concentrate.
  2. Fold in whipped topping and food coloring if desired.
  3. Pour into crust. Cover and refrigerate until set.

BANANA – interesting FACTS

Growing up my Grandma keep plenty of bananas in the kitchen. Not to forget the bucket loads of apples & oranges as well. If we wanted a snack, we got fruit – POINT BLANK. Anything else was not an option but over the years I discovered that I despise bananas. Still love apples & oranges but that banana, NO WAY JOSE’. I didn’t want nothing to do with it. Until about a year ago I found myself buying them again. And to my surprise I was enjoying them. I eat them as a snack. I eat them in my green smoothies. I’m like monkey loco for bananas. I just can’t get enough of them. They are always the first in the fruit bowl to disappear.  So one morning while surfing social media I ran across this article on the health benefits of the banana. It’s so packed with vital info (some I knew & some I didn’t) I just had to share. Hmmmm, I guess Grandma was on to something and as the saying goes “Grandma knows best.”

This is interesting. After reading this, you’ll never look at a banana in the same way again.

Bananas contain three natural sugars – sucrose, fructose and glucose combined with fiber. A banana gives an instant, sustained and substantial boost of energy.

Research has proven that just two bananas provide enough energy for a strenuous 90-minute workout. No wonder the banana is the number one fruit with the world’s leading athletes.

But energy isn’t the only way a banana can help us keep fit. It can also help overcome or prevent a substantial number of illnesses and conditions, making it a must to add to our daily diet.

DEPRESSION:
According to a recent survey undertaken by MIND amongst people suffering from depression, many felt much better after eating a banana. This is because bananas contain tryptophan, a type of protein that the body converts into serotonin, known to make you relax, improve your mood and generally make you feel happier.

PMS:
Forget the pills – eat a banana. The vitamin B6 it contains regulates blood glucose levels, which can affect your mood.

ANEMIA:
High in iron, bananas can stimulate the production of hemoglobin in the blood and so helps in cases of anemia.

BLOOD PRESSURE:
This unique tropical fruit is extremely high in potassium yet low in salt, making it perfect to beat blood pressure So much so, the US Food and Drug Administration has just allowed the banana industry to make official claims for the fruit’s ability to reduce the risk of blood pressure and stroke.

BRAIN POWER:
200 students at a Twickenham school ( England ) were helped through their exams this year by eating bananas at breakfast, break, and lunch in a bid to boost their brain power. Research has shown that the potassium-packed fruit can assist learning by making pupils more alert.

CONSTIPATION:
High in fiber, including bananas in the diet can help restore normal bowel action, helping to overcome the problem without resorting to laxatives.

HANGOVERS:
One of the quickest ways of curing a hangover is to make a banana milkshake, sweetened with honey. The banana calms the stomach and, with the help of the honey, builds up depleted blood sugar levels, while the milk soothes and re-hydrates your system.

HEARTBURN:
Bananas have a natural antacid effect in the body, so if you suffer from heartburn, try eating a banana for soothing relief.

MORNING SICKNESS:
Snacking on bananas between meals helps to keep blood sugar levels up and avoid morning sickness.

MOSQUITO BITES:
Before reaching for the insect bite cream, try rubbing the affected area with the inside of a banana skin. Many people find it amazingly successful at reducing swelling and irritation.

NERVES:
Bananas are high in B vitamins that help calm the nervous system..

Overweight and at work? Studies at the Institute of Psychology in Austria found pressure at work leads to gorging on comfort food like chocolate and chips. Looking at 5,000 hospital patients, researchers found the most obese were more likely to be in high-pressure jobs. The report concluded that, to avoid panic-induced food cravings, we need to control our blood sugar levels by snacking on high carbohydrate foods every two hours to keep levels steady.

ULCERS:
The banana is used as the dietary food against intestinal disorders because of its soft texture and smoothness. It is the only raw fruit that can be eaten without distress in over-chroniclercases. It also neutralizes over-acidity and reduces irritation by coating the lining of the stomach.

TEMPERATURE CONTROL:
Many other cultures see bananas as a ‘cooling’ fruit that can lower both the physical and emotional temperature of expectant mothers. In Thailand , for example, pregnant women eat bananas to ensure their baby is born with a cool temperature.

So, a banana really is a natural remedy for many ills. When you compare it to an apple, it has FOUR TIMES the protein, TWICE the carbohydrate, THREE TIMES the phosphorus, five times the vitamin A and iron, and twice the other vitamins and minerals.. It is also rich in potassium and is one of the best value foods around So maybe its time to change that well-known phrase so that we say, ‘A BANANA a day keeps the doctor away!’

L.O.C. Method for Natural Hair

Figuring out how to keep our hair soft and moisturized can be a challenge. In the winter, the air is drier, and the harsh winds can give our curls and coils a beating.

Over on the CurlTalk forum, curlies are discussing ways to ensure the moisture stays locked in. Does multiple day hair without remoisturizing seem like a distant dream? Try the hair product-layering combo of liquid, oil, cream — aka the L.O.C. method — to keep your hair soft this winter!

The LOC Method

  • First apply water (or a water-based leave-in) to moisturize the hair.
  • Lightly seal that layer with your favorite oil.
  • Next, seal that with a butter or cream and style.

The idea behind the L.O.C. method is that each layer seals the one before it. Many of you say this method is great for sealing in the moisture and achieving multiple day hair without re-upping on product application during the week.

Variations of the L.O.C. MethodAchieving super soft hair status might be a one-take success or a process of trial and error because there are variations of LOC method. After perusing forums, blogs and videos, here are a couple ways we noticed people use the method to moisturize their hair:

  • Liquid leave-in + oil + oil-based cream or butter like a DIY shea butter mix or Karen’s Body Beautiful Butter Love
  • Liquid leave-in + oil + water-based cream or butter like Darcy’s Botanicals Avocado and Honey Twisting Cream
  • Liquid leave-in + oil+ gel styler for a wash & go

The common factor between these variations is that, unlike many naturally curly hair routines, sealing with oil isn’t the last step. Usually after applying leave-ins and stylers, we seal the length of our hair or just our ends with oil. The L.O.C. method doesn’t stop there. For some people, that extra step keeps their hair moisturized longer.

Those with thin, fine, or naturally smooth-to-the-touch coils may find that this method weighs down their hair. Through trial and error, all hair types will have to figure out the right amount of product that their unique head of hair needs.

If you’re interested in trying something different in your hair routine this winter, consider the L.O.C. method! When first testing it out, remember a little product goes a long way.

Our Daily Bread – Thankful In All Things

Read: 1 Thessalonians 5:12-22

My daughter is allergic to peanuts. Her sensitivity is so acute that eating even the tiniest fragment of a peanut threatens her life. As a result, we scrutinize food package labels. We carry a pre-filled syringe of medicine (to treat allergic reactions) wherever we go. And, when we eat out, we call ahead and quiz the wait staff about the restaurant’s menu items.

Despite these precautions, I still feel concerned—both for her current safety and for her future safety. This situation is not something I would naturally be thankful about. Yet, God’s Word challenges: “In everything give thanks; for this is the will of God in Christ Jesus for you” (1 Thess. 5:18). There’s no getting around it. God wants us to pray with thanksgiving when the future is uncertain, when heartbreak hits, and when shortfalls come.

It’s hard to be grateful in difficulties, but it’s not impossible. Daniel “prayed and gave thanks” (Dan. 6:10), knowing that his life was in danger. Jonah called out “with the voice of thanksgiving” (Jonah 2:9) while inside a fish! These examples, coupled with God’s promise that He will work all things together for our good and His glory (Rom. 8:28), can inspire us to be thankful in all things.

One Shift Away

Years ago, I was at an amusement park with our two children. We were in line for a very popular ride. At first it was a single file line, but as we got closer to the front, we were gathered into groups and led into a little building about 20 feet by 20 feet to wait for our turn. We were the first ones in our group to enter the building. We walked all the way to the other side of the room next to these big double doors and waited. But as other people began to come in, they were excited about getting on the ride and started maneuvering their way in front of us. I’m more laid back and easy going, so I wasn’t going to try to fight for our position. It was so crazy that we ended up at the very back of the room by the doors where we came in. In a few minutes, a young lady came out who worked at the park and gave us instructions about the ride. Then she said, “Okay, we’re ready to go. Turn around and go back out the same doors you came in.” We thought we were in the worst position, but one word from the person in charge, and suddenly, we were in the best position!

In the same way, all God has to do is shift the direction of some things in your life, and you’ll go from the back to the front! The truth is, you’re one shift from seeing a dream come to pass; one shift from paying your house off; one shift from seeing your health improve; one shift from meeting the right person.

You might say, “Joel, you’re just getting people’s hopes up.” Yes, you’re right! You can’t have faith if you don’t first have hope. When you go out with the attitude that says, “God, I believe things are shifting in my favor this year,” that’s not just being positive, that’s your faith being released. When you declare God’s favor, God says to the angels, “Listen to what they’re saying. They believe I’m all-powerful. They believe I can do the impossible. Let Me move this person out of the way. Let Me open up this new door. Let Me line up this new relationship. Let Me turn that negative situation around.”

It says in Isaiah that, “This is God’s year to act.” Not next year. Not five years from now. Not in the “sweet by and by.” No, this is the year God is going to shift things in your favor. He is getting things all lined up. What you couldn’t make happen on your own, God is going to cause you to accomplish. It’s going to be bigger than you thought, it’s going to happen quicker than you imagined, and it’s going to be more rewarding than you ever dreamed of. Your part is to stay in faith; keep declaring that God is at work. Keep believing that He is turning things around for your good. Remember, this is the year of God’s favor, and you are just one shift away from every blessing He has in store for you!
